Profile
This is an organic certified Grade 4 natural lot, made up of the JARC variety 74112, a cultivar prized for its resilience and quality. The natural (dry) process involves meticulous care: cherries are hand-selected and spread in thin layers on raised drying beds. Between 10am and 3pm, the coffee is carefully covered to shield it from harsh sunlight, while hourly turning ensures an even, consistent drying. On average, this process takes 19 days, protecting the beans from over-fermentation and mould, and allowing complex sugars to fully develop.
